A conscious, sustainable durable use that, as the definition goes, reminds us how important it is to preserve what we have for future generations. We practise this in the vineyard, with wise, organic vineyard management; and in the cellar, where a treasure of precious bottles is kept, available only on allocation. An exhaustible source that holds all our knowledge, needy to be protected.
